It must be tasty, with crunch (ok, lot's of crunch), salty, and eaten with fingers so you can lick them clean afterwards.
There must be sauce.
There is always just never enough.
This Wednesday my friend cooked up his yummy calamari. It is fried (cringe), but what's life without a little 'fried', right??? It hit the spot - oh yeah!
This is perfect food to cheer on your winning team and satisfy the taste buds.
Salt and Pepper Calamari with Lemon:
2 fresh Calamari tubes - washed and towel dried.
1 x bowl of almond/hazelnut meal.
1 x egg beaten.
Oil of choice for shallow frying - coconut oil, olive oil, it's really up to you what you use but go as healthy as you can - this helps the 'cringe' factor.
Salt and Pepper
Dipping Sauce :
3 tbs of natural Greek yogurt
1/2 clove of garlic grated finely
pepper and salt to taste.
1/2 a lemon each to drizzle/drench your calamari in.
Heat oil in a fry pan until really hot - test by dropping some bread in and if it bubbles and fries your ready, too hot and it will burn. Monitor the heat of the oil as you go.
Cut calamari tubes into thin circle strips. Coat rings in beaten egg, then toss and coat in bowl of nut meal seasoned with salt and pepper. Place each ring into hot oil and cook for around 2 min, flipping calamari half way. When golden remove onto paper toweling to drain off any extra oil.
In separate bowl mix yogurt, garlic, chives, salt and pepper.
Serve calamari hot with dipping sauce and wedges of lemon to squeeze over. Enjoy.
