Last Salute to Winter Note!

I can't wait for Spring. Like most, the end of winter see's my heart wishing these last few weeks of cold to go, bringing the fresh warmth and blossoming new season.
But, Spring will come when it comes, no matter my pining so I decided to salute the last days of Winter with none other than my favorite slow cooked dish that will warm any heart still in the cold.


This is one of those recipes you just 'chuck it all in' and press cook.


Ingredients
750ml of red wine
Olive oil
2 Tbs plain flour
2 onions chopped.
4 garlic cloves crushed
beef stock.
bay leaf
Pesto, home made or store brought, it is the hero of this dish.
Your favourite beef cut that you love to stew.


Method
Cut your beef into bite size chunks and coat in the flour.
In a fry pan, coated with a touch of olive oil, cook the beef in batches till browned.
In a large saucepan or slow cooker, place your onion, garlic, beef and add enough red wine to just cover the meat. Add some beef stock (powdered in this case), and season with salt and pepper. Leave to cook for a good 8hrs.


Serve with mashed potato and your fav pesto sauce. I am telling you, this is  Delish! :)
